Lechon

Lechon or roasted pork is an authentic Filipino Delicacy.   Origins of  lechon maybe traced from Chinese immigrants in the Philippines.  There is an anecdote that roasted pork was born by accident when a Chinese man accidentally burned his house including the pigs that he raises at the backyard.  Out of curiosity the man touched the skin of the roasted pig while it was still hot but immediately withdrew his finger and put it inside his mouth by instinct.  He realized that it tastes good.  From then on he burns his house including a pig to cook and eat lechon.
